Take out the paper towel from the bowl, leaving the sausage inside. Add the scrambled eggs to the sausage and gently mix together. Wipe the skillet again and heat it over medium heat.
Butter one side of each slice of bread. Place one slice of bread in the skillet, butter side down.
Place one slice of Colby-Jack cheese on the bread. Add about ½ cup of the sausage and egg mixture on top. Add another slice of cheese, then place a second slice of bread on top with the butter side facing up.
Cook until the bottom is golden brown, about 3–4 minutes. Carefully flip and cook the other side until golden brown.
